June Jubilee fundraiser slated for June 1 at Jerseydale Ranch

The 28th annual June Jubilee will be held on Saturday, June 1 at the beautiful Jerseydale Ranch. This event is the primary fundraiser for the KidsFirst organization, which provides educational funding via grants to Mariposa County schools and teachers.

The Jerseydale Ranch is located at 6584 Jerseydale Road.

“The June Jubilee is an elegant and festive fundraising event supporting classrooms with grants that help enhance the students’ educational experience. Since spring of 1999, the Mini Grant Program has funded $305,669 in grants up to $750 each. Since 2004, the Large Grant Program has funded $225,244 in grants ranging from $750 to $3000. This is all thanks to the generosity of our community. I encourage everyone to attend this event. You can also support this organization by becoming a member of Kids First,” said President Lori Ritter.

The social hour with appetizers and a no-host wine and beer bar begins at 4 p.m. Bidding in the always-popular silent auction will begin at the same time. Items for the silent auction are provided by local Mariposa businesses. Near the end of the dinner, silent auction tables will be closed and the winners will be announced.

Dinner will be served at 5:30 p.m., catered by BB’s Catering. The dinner includes appetizers, salad, entrée and dessert. The menu includes four entrées. There will be blackberry braised beef short ribs accompanied with roasted asparagus and garlic mashed potatoes, prosciutto wrapped pesto chicken saltimbocca with burst tomatoes and burrata, accompanied with roasted asparagus and toasted rice pilaf; blackened salmon with peach and charred corn salsa plus roasted asparagus and toasted rice pilaf; or sautéed zucchini noodles (vegetarian) with angel hair, portobello, roasted carrots, seasonal vegetables, garlic, cream sauce and fresh Parmesan.

Appetizers include crispy herb meatballs with chimichurri, grilled peach crostini with honey and mascarpone cream and fresh mint, and mushroom, thyme, and Gruyère cheese stuffed pastry cups.

The salad is an Arcadian blend salad with Craisins, sliced apple, candied pecans, and strawberry vinaigrette served with sourdough rolls with cubed butter.

To top off the dinner, dessert consists of peach and blackberry cobbler with almond biscotti topping and whipped cream.
